So, we dabbled recently with shelf stable dairy, which means we forgot about it until the expiration date and then rushed to use it up. The whipping cream was a total bust, didn't gel at all. Admittedly we didn't refrigerate it for 6 hours first like the box said, but what's the point of whipping cream when you want it, if you have to wait 6 hours? Running to the convenience store is way faster. The milk held up better, but oddly curdled when I made it into pudding. Not sure if that was because it was 1% or just that shelf stable milk is weird. I think I'm done with it at any rate.
